The fact that pastries are an untouchable part of Vienna’s cultural heritage is, of course, also understood at Shiki. However, since desserts traditionally play a rather secondary role in classic Japanese cuisine, owner Joji Hattori and Head Chef Gerhard Bernhauer are now taking a new approach: they have created a dedicated Head Pastry Chef position and brought on 27-year-old Artemis Karavani for the role. Since 2025, she has been responsible for the restaurant’s sweet creations.
